Ingredients

  • Chicken & Prep:
    • 2 skinless, boneless chicken breasts
    • 1 tbsp olive oil, to brush
    • 1/2 cup breadcrumbs (optional, for a crispy outer coating)
    • Salt and black pepper, to taste
  • Spinach Parmesan & Red Pepper Filling:
    • 4 oz cream cheese, softened
    • 1/2 cup finely chopped fresh spinach (or frozen spinach, thawed and squeezed dry)
    • 1/4 cup grated Parmesan cheese
    • 2 tbsp finely diced roasted red peppers (or fresh red bell pepper)
    • 1/4 tsp garlic powder
  • Exterior Seasoning Rub:
    • 1/2 tsp paprika (or smoked paprika)
    • 1/2 tsp garlic powder
    • 1/2 tsp onion powder
    • 1/2 tsp Italian seasoning or dried oregano

Instructions

  1. Slice the Pockets: Place chicken breasts flat on a cutting board. Use a sharp knife to cut a horizontal pocket into the thick side of each breast, cutting about 3/4 of the way through without slicing all the way to the other side.
  2. Make the Filling: In a medium mixing bowl, mix the softened cream cheese, chopped spinach, Parmesan cheese, diced red peppers, and 1/4 tsp garlic powder until fully combined.
  3. Stuff & Secure: Evenly stuff the cream cheese mixture into the pocket of each chicken breast. Press the edges together to seal, and insert 2–3 wooden toothpicks along the seam to hold the filling in while cooking.
  4. Season: Brush the outside of the chicken with olive oil. Mix the paprika, garlic powder, onion powder, Italian seasoning, salt, and pepper in a small dish, then rub it evenly over both sides of the chicken. (If using breadcrumbs, gently press them onto the oiled exterior now.)
  5. Air Fry: Preheat your air fryer to 375°F (190°C). Place the stuffed chicken breasts into the air fryer basket in a single layer, ensuring they don’t overlap.
  6. Cook: Air fry at 375°F for 15 to 18 minutes, flipping halfway through, until the outside is golden brown and an instant-read thermometer inserted into the thickest part of the meat reaches 165°F (74°C).
  7. Rest & Serve: Let the chicken rest on a cutting board for 5 minutes. Carefully remove the toothpicks before slicing and serving.

  • Bacon & Cheddar Jalapeño: Swap the spinach and red pepper for 1/4 cup cooked crumbled bacon, 1/4 cup shredded cheddar, and 1 tbsp finely diced jalapeños.
  • Sun-Dried Tomato & Basil: Replace red peppers with 2 tbsp finely chopped sun-dried tomatoes (drained of oil) and swap spinach for fresh chopped basil.
