Ingredients

  • 8 lamb rib chops (about 1 inch thick)
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, smashed
  • 3 sprigs fresh rosemary
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper

Instructions

  1. Prep: Pat lamb chops completely dry with paper towels. Season generously on all sides with salt and black pepper.
  2. Sear: Heat olive oil in a heavy cast-iron skillet over medium-high heat until shimmering. Add lamb chops and sear for 3–4 minutes without moving until a deep golden crust forms.
  3. Baste: Flip chops. Add butter, smashed garlic, and fresh rosemary sprigs to the skillet. As the butter melts, tilt the pan and continuously spoon the infused butter over the chops for 3–4 minutes until internal temperature reaches 135°F for medium-rare.
  4. Rest: Transfer chops to a warm plate, spoon remaining pan juices over top, and let rest for 5 minutes before serving.
