This colorful Crunchy Asian-Inspired  Chicken Salad is a fresh, satisfying combination of tender  chicken, crisp cabbage, carrots, cucumber, bell pepper, green onions, sesame seeds, and a savory homemade dressing. Crispy noodles add extra texture, making every bite crunchy and flavorful.

Ingredients

For the Salad

  • 2 cups (about 300 g)  cooked chicken breast, shredded or chopped
  • 3 cups finely shredded green cabbage
  • 1 cup finely shredded purple cabbage
  • 1 large carrot, julienned or grated
  • 1 medium cucumber, diced
  • 1 red bell pepper, thinly sliced
  • 3 green onions, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • 2 tablespoons sesame seeds
  • ½ cup crispy chow-mein or rice noodles

For the Dressing

  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 tablespoon neutral cooking oil
  • 1 teaspoon fresh grated ginger
  • 1 garlic clove, finely minced
  • 1 teaspoon lime juice
  • ¼ teaspoon black pepper

Instructions

  1. If using raw chicken, cook it thoroughly and allow it to cool slightly before chopping. Chicken should reach 165°F (74°C) in the thickest part when checked with a food thermometer.
  2. Shred or chop the cooked chicken into bite-sized pieces. You can use chicken breast, leftover roasted chicken, or plain rotisserie chicken.
  3. Place the shredded green cabbage in a large bowl.
  4. Add the purple cabbage and carrot. Toss them together so the colors and textures are evenly distributed.
  5. Add the diced cucumber and sliced red bell pepper.
  6. Add the sliced green onions and chopped cilantro.
  7. Add the cooked chicken to the vegetable mixture.
  8. Sprinkle the sesame seeds over the salad.
  9. In a separate small bowl, combine the soy sauce, rice vinegar, sesame oil, honey, neutral oil, ginger, garlic, lime juice, and black pepper.
  10. Whisk the dressing thoroughly until the ingredients are well combined.
  11. Pour about two-thirds of the dressing over the salad.
  12. Using salad tongs or two large spoons, gently toss everything together until the chicken and vegetables are coated.
  13. Taste the salad and add more dressing if desired.
  14. Let the dressed salad sit for about 5 minutes. This gives the vegetables a chance to absorb some of the dressing while remaining crisp.
  15. Just before serving, add the crispy noodles.
  16. Gently toss once or twice. Avoid vigorous mixing because the noodles can break apart quickly.
  17. Sprinkle a few additional sesame seeds and green onions over the top.
  18. Serve immediately while the vegetables are crisp and the noodles are crunchy.

Helpful Tips

For the best texture, don’t add the crispy noodles until the very last moment. If they’re mixed into the salad too early, they can absorb moisture from the dressing and become soft.

You can also prepare the vegetables and dressing ahead of time. Keep them refrigerated separately and combine them shortly before serving.

If you prefer a creamier salad, a small spoonful of plain yogurt can be whisked into the dressing. For extra freshness, add a little more lime juice immediately before serving.

Easy Variations

Chicken & Edamame: Add ½–1 cup shelled edamame.

Cashew Chicken Salad: Add ¼ cup chopped roasted cashews for extra crunch.

Mandarin Chicken Salad: Add drained mandarin orange segments for a sweet citrus flavor.
