Ingredients

  • 1 tbsp Hot sauce (Frank’s RedHot)
  • 1 tsp Salt

  • 1 cup Unflavored whey protein isolate (or unflavored collagen/egg white protein powder)
  • ¾ cup Crushed pork rinds or pork panko (for extreme crunch and zero carbs)
  • ¼ cup Super-fine almond flour

  • 2 tsp Freshly ground black pepper
  • 2 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • ½ tsp Cayenne pepper (optional)
  • Olive oil or avocado oil spray

Instructions

  1. Marinate the Chicken: Whisk together the almond milk, Greek yogurt, hot sauce, and 1 teaspoon of salt in a large bowl until smooth. Add the chicken pieces, turning to coat evenly. Cover and refrigerate for at least 2 hours (or overnight for optimal tenderness).
  2. Prepare the Coating: In a wide shallow dish, combine the protein powder, crushed pork rinds, almond flour, salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper. Mix thoroughly.
  3. Double Dredge for Maximum Crunch: Remove a piece of chicken from the marinade, letting excess liquid drip off. Dredge in the protein powder mixture, pressing gently to adhere. Dip quickly back into the wet marinade, then coat once more in the dry mix for a thick, craggy layer.
  4. Rest the Batter: Set the coated chicken on a wire rack for 10–15 minutes. This step hydrates the dry coating and helps it lock onto the skin before air frying.
  5. Air Fry: Preheat your air fryer to 380°F (195°C). Lightly spray the air fryer basket with avocado or olive oil spray. Place the chicken pieces in a single layer without crowding. Generously spray the tops with cooking oil to eliminate any dry powdery spots.
  6. Cook & Flip: Air fry for 25 minutes, flipping the chicken halfway through. Lightly spray the flipped side with oil mist.
  7. Check Doneness & Rest: Ensure the internal temperature reaches 165°F (74°C) at the thickest part without touching the bone. Rest on a wire rack for 5 minutes before serving to keep the juices sealed in.
