Cut the potatoes: Slice the potatoes into uniform 1/4-inch thick sticks.
Soak in cold water: Place the cut potatoes in a bowl of cold water for 20–30 minutes. This removes excess starch and ensures maximum crispiness.
Dry thoroughly: Drain the potatoes and dry them completely with a paper towel or kitchen towel. Excess moisture prevents crisping.
Season lightly: In a dry bowl, toss the potato sticks with 1 tablespoon of oil, garlic powder, paprika, salt, and pepper until evenly coated.
Air fry: Preheat your air fryer to 380°F (195°C). Add the fries to the basket in a single layer (cook in batches if needed so you don’t overcrowd). Cook for 12 minutes, shaking the basket halfway through.
Finish at high heat: Increase the temperature to 400°F (200°C) and cook for an additional 3 to 5 minutes until golden brown and extra crispy.
